Imagine an edible Pina Colada. A firm coconut cake, soaked in Rum with a sweet filling of Maui Gold Pineapple compote. All encased in Homemade vanilla coconut Marshmallow fluff.
This dessert is fairly small, but rich. Serves 4 to 6.
